Almond Butter Granola


I have always loved our honey granola, but lately we have been on a MAJOR almond butter kick. I decided to switch it up and make it with almond butter, and I added in some coconut chips and chopped almond. The good news is, it turned out great! The bad news is, I can’t stop eating it! It tastes great in a yogurt bowl (pictured below), paired with almond milk, or just eaten plain with a spoon!


Almond Butter Granola


Ingredients:
  • 2 cups quick oats
  • 1/2 cup chopped almonds
  • 1/2 cup coconut chips
  • 1/4 teaspoon salt
  • 1/2 teaspoon cinnamon
  • 1/2 cup almond butter
  • 1/4 cup coconut oil
  • 2 teaspoons honey
  • 1/2 teaspoon vanilla
